Blueberry Maple Chia Overnight Refrigerator Oats


Since starting my clean eating lifestyle change, I've been making it a point to get breakfast in within half an hour...(sometimes an hour) of getting out of bed. Sometimes this is easier than others. One of my current breakfast favorites is an egg on top of a sweet potato/zucchini/squash/onion/tomato/garlic hash....mmmm. But every once in a while, I just want to grab and eat which is nice especially after a good workout.

For this recipe you will need:

1/4 Cup Uncooked Old Fashioned Oats
1/3 Cup Unsweetened Almond Milk
1/4 Cup Non Fat Greek Yogurt
2 Tsp Chia Seeds
2 Tsp Organic Maple Syrup
1/4 cup Blueberries (Fresh or frozen)
Cinnamon & or Walnuts for topping (Optional)

This recipe is so easy peasy it's only 3 steps. 
Step Numero Uno: Take your Oats, Almond Milk, Greek Yogurt, Chia Seeds & Maple Syrup and put them in a container. (I was sending some to work with my hubbin as an anniversary breakfast so I used tupperware) You basically just want something with a lid so you can shake it up.
 Shake all the ingredients and then mix in the blueberries. Cover and put in the fridge. Now go to bed! It's late!
 In the morning, the oats should be nice and soft and the Chia Seeds will have absorbed some of the milk & yogurt and take on a really great texture in the super easy breakfast. You can top it with a dash of Cinnamon and some crushed Walnuts for some added texture, but you really don't need it. It's that good. Happy eating loves!
