Oatmeal & Chia Banana Muffin

I LOVE bananas. And when I can get bananas in something in the form of something I equally love (muffins) I am one happy, happy camper.
For this recipe you will need:

2 1/2 cups Old Fashioned Oats
2 tbs Chia Seeds
1 cup Non fat Greek Yogurt
2 eggs
1/2 cup Honey 
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Vanilla
2 ripe bananas 

What you want to do first, after pre heating the oven to 350, is add your Old Fashioned Oats and Chia Seeds to a food processor and pulse it for about 15 seconds. You don't want it to be fine. Unless you do, but I like the texture of leaving some oats whole. 

 Next you're going to add all of your remaining ingredients into the food processor and let it go until it's all worked together and fairly smooth.
Spray a muffin tin with some non stick cooking spray (as always I use Trader Joes Coconut Oil)
See that lovely chunk of banana that snuck in there? Love that.
 Now you're ready to bake them! Put them in the oven for about 18-20 minutes, or until they look like this...
 I added a few chocolate chips to the bottom of one of them to test it out and they sunk to the bottom creating some sort of chocolate puddle...it was perfect. HA.
Next time I think I will skip the chocolate chips and add walnuts to them instead. They are perfectly banana-ey and really hit the spot.
